2 fresh tomatoes roughly chopped
1 lemon
1 lb chicken or beef or shrimp
1 Bay leaf
1 14.5oz can of coconut milk (unsweetened)
2 whole carrots chopped
2 stalks of celery chopped
7 starks asparagus (cut into 3 pieces)
4-5 button mushrooms roughly chopped
1 onion chopped
2-3 cloves of garlic finely diced
2 T olive oil
2 T curry powder
In large sauce pan, saute onion, carrots, celery, tomatoes and asparagus in 2 T of olive oil and garlic and bay leaf. When onions are clear, add curry and mix thouroughly. Add chicken (or beef or shrimp) and cook till juices run clear. Add mushrooms. Add coconut milk slowly stirring well. Let simmer covered for 15-20 minutes. It’s ok to simmer longer if you are making this for a dinner party and want it to be finished before guests arrive. Just before serving add in the juice from one lemon. Remove Bay leaf. Serve over Jasmine rice and with a hearty crusty bread. Delicious! You can also substitute any of the vegetables for your favorites, the only one you need for consistancy is the onion and tomatoes.
